American Cherry Cheesecake
American Cherry Cheesecake has a refined taste and is a combination of fruit, nuts and cherries. This is a relatively easy to make recipe but make sure you read the recipe all the way through before you start to make it. There is a bit of preparation involved.
2 tblsp golden syrup
175g plain sweet biscuits, crushed
480g cream cheese, softened
1 tsp vanilla essence
150ml double cream
150g Greek style yoghurt
125g caster sugar
425g can cherry pie filling
60g good quality dark chocolate, melted
Grease a 20cm (8inch) spring form cake tin and line the sides with a strip of non stick baking paper. Preheat oven to 160 degrees celsius.
Heat butter and golden syrup in a small pan until the butter has melted. Stir in crushed biscuits and stir well to combine. Line base and slightly up the sides of the cake tin. Refrigerate whilst making the filling.
Beat the cream cheese and vanilla essence in a bowl until smooth and creamy. Beat in the cream, yoghurt, caster sugar and eggs.
Pour cream cheese mixture over the biscuit base and bake for 45 minutes or until the surface feels just firm around the edges but is still wobbly in the centre. Turn the oven off and let the cheesecake cool in the oven. When cool, refrigerate and chill well.
Transfer cheesecake to a serving plate and peel away the lining paper. Top cheesecake with a can of cherry pie filling. Drizzle melted chocolate in horizontal lines across the top of the cherries. Serve chilled.
