Chocolate Cheesecake Supreme



Chocolate Cheesecake Supreme is a rich baked cheesecake that will impress your guests. Its perfect for an after dinner dessert with freshly roasted coffee.

INGREDIENTS

Base
1 1/2 cups plain chocolate biscuits
1/2 tsp ground cinnamon
1/2 cup melted butter


Filling
185g dark chocolate
500g cream cheese, softened
1/2 cup caster sugar
3 eggs
1 tblsp vanilla essence
1 tblsp cocoa
1 cup sour cream
1/2 cup cream, whipped
additional cream


METHOD

Base

Crush biscuits in a food processor with with the end of a rolling pin. Add cinnamon and melted butter to biscuit crumbs and mix well. Firmly press mixture into the base of a lightly greased 23cm springform cake tin. Refrigerate.


Filling
Melt chocolate in a bowl over a saucepan of hot water. Don't allow water to come into contact with the chocolate.

Beat cream cheese until smooth and fluffy, then beat in sugar until the mixture is creamy. Add eggs one at a time, beat well after each addition. Stir in the melted chocolate, cocoa, vanilla and sour cream. Lightly fold in whipped cream.

Pour into prepared biscuit base and bake at 150 degrees celsius for approx one hour. Turn oven off and allow cheesecake to remain in the oven for 30 minutes. Open oven door and leave cheesecake in the oven until is is cool.

Beat the extra cream until stiff and spread around the outer edge of the cheesecake.
