Continental Cheesecake is a simple baked cheesecake that is easy to make. It is very nice served with fresh fruit and whipped cream.
185g plain sweet biscuits
500g cream cheese, softened
1 cup castor sugar
150ml sour cream
1 tblsp castor sugar, extra
Crush biscuits in a food processor or with the end of a rolling pin. Add nutmeg and mix. Sprinkle over the base of a greased 20cm springform cake tin.
Beat cream cheese until smooth and creamy. Beat in castor sugar and eggs. Spoon gently over biscuit base and bake for 30 minutes at 180 degrees celsius.
Mix sour cream with extra castor sugar and spread over the top of the cheesecake. Return to the oven and bake for a further 12 to 15 minutes. Turn the oven off and let cheesecake cool with the door slightly ajar.
Refrigerate when cool.
