Dark Chocolate Cheesecake


This Dark Chocolate Cheesecake recipe is deliciously sweet and will impress your guests on that special occasion.

INGREDIENTS

Base
155g plain chocolate biscuits
60g butter, melted
1/4 tsp cinnamon

Filling
155g good quality dark chocolate
500g cream cheese
3/4 cup caster sugar
2 eggs
1 dessert spoon cocoa
1 tsp vanilla essence
1 cup sour cream

METHOD

Base
Crush biscuits in food processor or with the end of a rolling pin. Combine biscuit crumbs, butter and cinnamon. Press mixture into base of a 20cm springform cake tin. Refrigerate to set.

Filling
Place broken chocolate pieces into a bowl and place bowl over a saucepan of simmering water. Stir and allow chocolate to melt.

Wtih an electric mixer, beat cream cheese and sugar until smooth and fluffy. Add eggs one at a time, mixing well after each addition. Add cocoa, melted chocolate, vanilla and sour cream. Beat well. Pour cream cheese mixture over biscuit base.

Stand cake tin on a baking tray; bake at 150 degrees celsius for 1 hour and 10 minutes. Turn off the heat and allow cheesecake to cool in the oven with the door slightly ajar. Refrigerate when cool.

Decorate with whipped cream and grated chocolate.
