Low Calorie Cheesecake

Low Calorie Cheesecake is delicious served with fresh fruit. Perfect for that guilt free dessert.

INGREDIENTS

1 tblsp plain Weight Watchers sweet biscuits, crushed
2 tblsp plain flour
1 cup low fat cottage cheese
2 tblsp skim milk
500g Neufchatel Cheese, softened (use light Philly if unable to get Neufchatel)
2 eggs
1/4 cup almond extract
2/3 cup caster sugar

METHOD

Lightly grease a 23cm springform cake tin. Sprinkle with biscuit crumbs. Shake crumbs around the bottom and gently tip out excess.

Blend cottage cheese in a food processor or with an electric mixer on high until smooth.

In a large bowl, using an electric mixer, combine cottage cheese, neufchatel, sugar and flour. Mix on medium speed until well blended. Add eggs, one at a time. Mix well after each addition. Blend in milk and almond extract.

Pour mixture gently into cake tin. Bake at 160 degrees celsius for 45 to 50 minutes. Turn oven off and let cheesecake cool in oven with the door ajar. When cheesecake is completely cool, remove from tin, cover with plastic wrap and refrigerate for 8 hours. Serve with fresh strawberries or blueberries.
