Mocha Chocolate Chip Cheesecake



Mocha Chocolate Chip Cheesecake combines the flavours of chocolate and coffee to create a delicious dessert. Impress your guests easily with this cheesecake.

INGREDIENTS

Base
185g plain chocolate biscuits
90g butter, melted
1/2 cup chocolate chips

Filling
500g cream cheese, softened
250g chocolate chips
1/2 cup milk
1 tblsp gelatine
400g sweetened condensed milk
2 cups cream, whipped
2 tblsp instant coffee powder

METHOD

Base
Crush biscuits in a food processor or with the end of a rolling pin until they resemble fine crumbs. Add melted butter and chocolate chips and combine well. Press mixture into the base of a 23cm springform cake tin. Refrigerate.

Filling
In a small saucepan over low heat, combine milk and coffee. Sprinkle gelatine over the top and stir continuously until gelatine has dissolved. Set aside to cool slightly.

Using an electric mixer, beat cream cheese until smooth. Add sweetened condensed milk and gelatine mixture and mix well to combine. Fold in whipped cream and chocolate chips.

Pour over biscuit base and refrigerate for a minimum of 4 hours, preferably overnight. Decorate with extra chocolate chips before serving.
