Passionfruit Cheesecake Slice
Passionfruit Cheesecake Slice is a popular recipe for good reason. Easy to make and a great idea for morning tea.
250g coconut biscuits
90g butter, melted
250g cottage cheese
250g cream cheese
440g can sweetened condensed milk
1 dessert spoon gelatine
1/4 cup boiling water
1/4 cup lemon juice
1 tsp grated lemon rind
2 tsp white vinegar
3/4 cup cream, whipped
Line a 7inch x 11 inch lamington tin with aluminum foil.
Crush biscuits in a food processor or with the end of a rolling pin until they resemble fine bread crumbs. Add melted butter to crumbs and mix well to combine. Refrigerate until firm.
Add gelatine to boiling water. Whisk with a fork until gelatine has dissolved. Set aside to cool slightly.
Beat together cottage and cream cheeses until smooth. Add condensed milk, lemon juice, dissolved gelatine, lemon rind and vinegar.
Beat until mixture is creamy, fold in whipped cream. Gently fold in pulp from two passionfruit. Pour mixture gently over biscuit base, spread smoothly. Spread remaining passionfruit on top.
Refrigerate until set. Cut into slices to serve.
