Chocolate Cheesecake Truffles
Chocolate Cheesecake Truffles are absolutely devine. They are quick and easy to make and are suitable for any occasion from morning tea to an after dinner dessert.
200g dark chocolate, chopped
200g cream cheese, softened
1/4 cup icing sugar, sifted
1 tblsp Bailey's Irish Cream Liquer
1 x 200g pckt Tim Tams or other chocolate coated biscuits, crushed.
Place chocolate in a microwave safe bowl, cook on high for 30 seconds. Stir and cook for another 30 seconds. Stir until chocolate has melted. Set aside to cool slightly.
Beat cream cheese and icing sugar until combined and fluffy, stir in Bailey's and melted chocolate. Chill mixture in fridge until it is firm enough to handle.
Roll teaspoonfuls of mixture into balls and then roll in biscuit crumbs. Refrigerate for 24 hours.
