Georgia Peach Cheesecake
Georgia Peach Cheesecake is an original southern recipe. It is low in fat and is easy to make. Enjoy the guilt free pleasure. This recipe was provided courtesy of Jerry from Beautiful Pooler, Georgia.
1 cup graham cracker crumbs
3 tblsp margarine
2 tblsp sugar
1 envelope unflavoured gelatine
1/2 cup cold water
250g light cream cheese, softened
3 tblsp sugar
1/8 tsp ground ginger
1/2 cup skim milk
500g low fat peach flavoured yoghurt
Fresh peaches, peeled and sliced
1 tblsp lemon juice
In a medium size bowl, combine biscuit crumbs, margarine and sugar. Stir to combine. Press biscuit mixture into the base of a 23cm (9in) springform cake tin. Refrigerate.
Pour cold water into a small saucepan. Sprinkle gelatine over the water. Over low heat, stir until gelatine has dissolved. Set aside to cool slightly.
Using an electric mixer, beat cream cheese until smooth. Add sugar and ginger and mix well. Gradually pour in milk and gelatine mixture, mix well.
Refrigerate mixture until it thickens slightly (not set). Gently fold in yoghurt. Pour mixture over biscuit base. Refrigerate for 6 hours minimum.
Combine peach slices and lemon juice. Remove rim of springform cake tin just prior to serving. Decorate the top of the cheesecake with the peach slices. Serves 8.
