Hazelnut Cheesecake

If you love hazelnuts, you will love Hazelnut Cheesecake. Its easy to make and perfect for a casual weekend get together with friends.


Biscuit Crust
155g plain sweet biscuits
90g butter, melted
60g ground hazelnuts

375g cream cheese, softened
1/2 cup sugar
2 eggs
1 dessert spoon custard powder
1 tsp vanilla essence
1 tblsp lemon juice
chopped hazelnuts


Crush biscuits finely in a food processor or with the end of a rolling pin. Add melted butter and stir until well combined. Press onto basee and up side of a 18cm springform cake tin. Refrigerate until firm.

Cream together cream cheese and sugar until it is pale and fluffy. Add eggs, one at a time, beating well after each addition. Add custard powder, vanilla essence and lemon juice. Beat well. Pour mixture gently into prepared crust.

Bake at 150 degrees celsius for 40 minutes. Fifteen minutes before the end of cooking time, sprinkle a few chopped hazelnuts over the top of cheesecake and continue cooking. At the end of the cooking time, turn the oven off and leave cheesecake to cool in the oven. Refrigerate for several hours or overnight.
