Key Lime Cheesecake

Key Lime Cheesecake is the ultimate creamy, tangy, lime flavoured dessert. Its easy to make and perfect for a weekend barbecue with your friends.


1 1/2 cups plain sweet biscuits
1/4 cup butter, melted

2 extra large eggs, separated
2 tblsp sugar
750g cream cheese, softened
1/4 cup lime juice
1 cup sugar


Preheat oven to 180 degrees celsius.

Crush biscuits in food processor or with the end of a rolling pin until they resemble fine bread crumbs. Add melted butter and stir to combine well. Press into the bottom and up the sides of an 8 inch springform pan or pie plate.

Bake for five minutes, remove from oven and set aside to cool.

To make filling, use an electric mixer on medium speed and beat egg whites until stiff.

Add 2 tblsp sugar and beat a further 2 minutes until sugar has dissolved. Set aside.

Beat together cream cheese and egg yolks until smooth. Add lime juice and 1 cup sugar, beating for a further 2 minutes until sugar has dissolved.

Fold in beaten egg whites. Mix gently until smooth.

Pour mixture over biscuit crust and bake for 40 to 45 minutes until lightly browned. Do not open the oven door for the first 35 minutes of baking.

Remove cheesecake from oven and let it cool on a wire rack for 1 to 2 hours. Then refrigerate for about 4 hours before serving.
