Smoked Chicken and Sundried Tomato Cheesecake

250g savoury cheese biscuits, crushed
90g butter, melted

250g cream cheese, softened
200g smoked chicken breast, chopped
2 large leeks, sliced
150g semi sundried tomatoes, chopped
1 tblsp fresh thyme, finely chopped
300g sour cream
10g butter, extra
100g grated cheddar cheese
5 eggs

Grease and line a 23cm (9in) springform pan.

Combine biscuit crumbs and butter. Press into base of pan. Chill in fridge whilst preparing cheesecake filling.

Heat butter in a frying pan and saute leeks until softened. Remove from heat and allow to cool.

Beat cream cheese using an electric mixer until smooth. Beat in the sour cream and eggs (one at a time) until well combiined. Stir in the leek, chicken, tomatoes, cheese, thyme and salt and pepper to taste.

Pour mixture over biscuit base and bake at 160 degrees celsius for 45-50 minutes until just set. Turn oven off and allow cheesecake to cool inside oven with the door ajar before removing from tin.

Serve warm or cold with a fresh salad.
